- Whole wheat flour - 1 cup
- Semolina - 2 tablespoons
- Baking powder - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Oil - 2 tablespoons
- Water - as needed
- Yellow split peas (moong dal) - 1/2 cup
- Turmeric powder - 1/2 teaspoon
- Cumin seeds - 1/2 teaspoon
- Ginger (grated) - 1 teaspoon
- Green chili (finely chopped) - 1 small
- Onion (finely chopped) - 1 small
- Tomato (chopped) - 1 medium
- Coriander powder - 1 teaspoon
- Garam masala - 1/2 teaspoon
- Cilantro (chopped) - for garnish
- Lemon juice - 1 tablespoon
Steps
- Preheat the oven to 200°C (400°F).
- In a mixing bowl, combine whole wheat flour, semolina, baking powder, and salt. Mix well.
- Add oil and gradually incorporate water until a smooth dough forms. Cover and let it rest for 15 minutes.
- Meanwhile, rinse the yellow split peas and cook them in 2 cups of water with turmeric powder until soft (about 20-25 minutes).
- In a pan, heat a little oil and add cumin seeds, grated ginger, and chopped green chili. Sauté for a minute until fragrant.
- Add chopped onion and cook until translucent. Stir in the chopped tomato and cook until softened.
- Mix in coriander powder and garam masala, cooking for another minute.
- Add the cooked yellow split peas to the pan, mash slightly, and adjust seasoning with salt. Cook for 5 minutes, then remove from heat.
- Divide the dough into 6 equal portions and shape them into round balls.
- Place the baatis on a baking sheet lined with parchment paper and bake for 20-25 minutes or until golden brown, flipping halfway through.
- Serve the baked baatis with the spiced daal, garnished with cilantro and a drizzle of lemon juice.
