Ingredients

  • Whole wheat flour - 1 cup
  • Semolina - 2 tablespoons
  • Baking powder - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Oil - 2 tablespoons
  • Water - as needed
  • Yellow split peas (moong dal) - 1/2 cup
  • Turmeric powder - 1/2 teaspoon
  • Cumin seeds - 1/2 teaspoon
  • Ginger (grated) - 1 teaspoon
  • Green chili (finely chopped) - 1 small
  • Onion (finely chopped) - 1 small
  • Tomato (chopped) - 1 medium
  • Coriander powder - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Cilantro (chopped) - for garnish
  • Lemon juice - 1 tablespoon

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a mixing bowl, combine whole wheat flour, semolina, baking powder, and salt. Mix well.
  3. Add oil and gradually incorporate water until a smooth dough forms. Cover and let it rest for 15 minutes.
  4. Meanwhile, rinse the yellow split peas and cook them in 2 cups of water with turmeric powder until soft (about 20-25 minutes).
  5. In a pan, heat a little oil and add cumin seeds, grated ginger, and chopped green chili. Sauté for a minute until fragrant.
  6. Add chopped onion and cook until translucent. Stir in the chopped tomato and cook until softened.
  7. Mix in coriander powder and garam masala, cooking for another minute.
  8. Add the cooked yellow split peas to the pan, mash slightly, and adjust seasoning with salt. Cook for 5 minutes, then remove from heat.
  9. Divide the dough into 6 equal portions and shape them into round balls.
  10. Place the baatis on a baking sheet lined with parchment paper and bake for 20-25 minutes or until golden brown, flipping halfway through.
  11. Serve the baked baatis with the spiced daal, garnished with cilantro and a drizzle of lemon juice.
