  • Almond flour - 1 cup
  • Coconut flour - 1/4 cup
  • Baking powder - 1 tsp
  • Sea salt - 1/2 tsp
  • Honey - 2 tbsp
  • Coconut milk - 1/2 cup
  • Eggs - 2 large
  • Ghee or coconut oil - 2 tbsp
  • Cornmeal - 1/4 cup

Steps

  1. Preheat your oven to 180°C (350°F) and grease a small baking pan with ghee or coconut oil.
  2. In a mixing bowl, combine the almond flour, coconut flour, baking powder, sea salt, and cornmeal, and whisk well.
  3. In another bowl, whisk together the eggs, honey, coconut milk, and melted ghee or coconut oil until fully combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined, being careful not to overmix.
  5. Pour the batter into the greased baking pan, smoothing the top with a spatula.
  6. Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
