Ingredients

  • Rice flour - 30 grams
  • Baking powder - 1 teaspoon
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Green chili - 1 (finely chopped)
  • Fresh coriander leaves - 2 tablespoons (chopped)
  • Salt - 1/2 teaspoon (or to taste)
  • Water - 100 ml
  • Olive oil - 1 tablespoon (for brushing)

Steps

  1. Preheat the oven to 200°C (390°F) and line a baking tray with parchment paper.
  2. In a mixing bowl, combine the sweet corn, all-purpose flour, rice flour, baking powder, cumin powder, coriander powder, turmeric powder, chopped green chili, chopped coriander leaves, and salt.
  3. Gradually add water to the dry mixture, stirring until you achieve a thick batter that holds together. Adjust the water as needed.
  4. Using a spoon or your hands, shape the batter into small fritters and place them on the prepared baking tray.
  5. Brush the fritters lightly with olive oil to help them crisp up in the oven.
  6. Bake in the preheated oven for about 20-25 minutes or until golden brown and crispy, flipping halfway through for even cooking.
