- Tomato - 1 medium, pureed
- Ginger - 1 teaspoon, grated
- Garlic - 2 cloves, minced

- Cumin seeds - 1 teaspoon
- Coriander powder - 1 teaspoon
- Garam masala - 1/2 teaspoon
- Turmeric powder - 1/2 teaspoon
- Salt - to taste
- Fresh coriander leaves - for garnish
- Whole wheat flour - 150 grams
- Baking powder - 1/2 teaspoon
- Olive oil - 1 tablespoon
- Water - as needed
Steps
- Preheat the oven to 200°C (400°F).
- Drain and rinse the soaked chickpeas, then cook them in a pressure cooker or pot with enough water until tender, about 15-20 minutes.
- In a pan, heat a tablespoon of olive oil over medium heat, add cumin seeds, and let them splutter.
- Add chopped onions, ginger, garlic, and green chili to the pan; sauté until the onions are golden brown.
- Stir in the pureed tomato, turmeric powder, coriander powder, and salt; cook until the mixture thickens.
- Add the cooked chickpeas to the pan, along with 1/2 cup of water. Mix well and let it simmer for 10 minutes. Stir in garam masala and remove from heat.
- In a mixing bowl, combine whole wheat flour, baking powder, and a pinch of salt. Add water gradually to form a soft dough, then knead for about 5 minutes.
- Cover the dough with a damp cloth and let it rest for 15 minutes.
- Divide the dough into two equal portions and roll them out into flat rounds (about 1/4 inch thick).
- Place the rolled dough on a baking sheet lined with parchment paper and bake for 10-12 minutes, or until lightly browned and puffed up.
- Serve the baked bhature with the chole, garnished with fresh coriander leaves.
