Ingredients

  • Chickpeas - 200 grams (soaked overnight)
  • Onion - 1 medium, finely chopped
  • Tomato - 1 medium, pureed
  • Ginger - 1 teaspoon, grated
  • Garlic - 2 cloves, minced
  • Green chili - 1, finely chopped (optional)
  • Cumin seeds - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Salt - to taste
  • Fresh coriander leaves - for garnish
  • Whole wheat flour - 150 grams
  • Baking powder - 1/2 teaspoon
  • Olive oil - 1 tablespoon
  • Water - as needed

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Drain and rinse the soaked chickpeas, then cook them in a pressure cooker or pot with enough water until tender, about 15-20 minutes.
  3. In a pan, heat a tablespoon of olive oil over medium heat, add cumin seeds, and let them splutter.
  4. Add chopped onions, ginger, garlic, and green chili to the pan; sauté until the onions are golden brown.
  5. Stir in the pureed tomato, turmeric powder, coriander powder, and salt; cook until the mixture thickens.
  6. Add the cooked chickpeas to the pan, along with 1/2 cup of water. Mix well and let it simmer for 10 minutes. Stir in garam masala and remove from heat.
  7. In a mixing bowl, combine whole wheat flour, baking powder, and a pinch of salt. Add water gradually to form a soft dough, then knead for about 5 minutes.
  8. Cover the dough with a damp cloth and let it rest for 15 minutes.
  9. Divide the dough into two equal portions and roll them out into flat rounds (about 1/4 inch thick).
  10. Place the rolled dough on a baking sheet lined with parchment paper and bake for 10-12 minutes, or until lightly browned and puffed up.
  11. Serve the baked bhature with the chole, garnished with fresh coriander leaves.
