- canned chickpeas - 400 grams, drained and rinsed
- onion - 1 medium, finely chopped
- tomato - 1 large, pureed
- ginger - 1 teaspoon, grated
- garlic - 2 cloves, minced
- green chili - 1, finely chopped
- cumin seeds - 1 teaspoon
- coriander powder - 1 teaspoon
- turmeric powder - 1/2 teaspoon
- garam masala - 1 teaspoon
- salt - to taste
- cooking oil - 1 tablespoon
- fresh cilantro - 2 tablespoons, chopped
- grated cheese (mozzarella or cheddar) - 50 grams
- lemon juice - 1 tablespoon
Steps
- Preheat the oven to 180°C (350°F).
- In a pan, heat the cooking oil over medium heat and add cumin seeds. Sauté until they start to splutter.
- Add the chopped onion and sauté until golden brown.
- Add the ginger, garlic, and green chili, and cook for another 2 minutes.
- Stir in the pureed tomato, coriander powder, turmeric powder, and salt. Cook until the mixture thickens and the oil separates, about 5-7 minutes.
- Add the drained chickpeas to the pan, mix well, and cook for another 2 minutes.
- Stir in the lemon juice and chopped cilantro, then remove from heat.
- Transfer the chickpea mixture to a baking dish and spread it evenly.
- Sprinkle grated cheese on top of the chickpea mixture.
- Bake in the preheated oven for 20 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and let it cool for a few minutes before serving.
