Ingredients

  • canned chickpeas - 400 grams, drained and rinsed
  • onion - 1 medium, finely chopped
  • tomato - 1 large, pureed
  • ginger - 1 teaspoon, grated
  • garlic - 2 cloves, minced
  • green chili - 1, finely chopped
  • cumin seeds - 1 teaspoon
  • coriander powder - 1 teaspoon
  • turmeric powder - 1/2 teaspoon
  • garam masala - 1 teaspoon
  • salt - to taste
  • cooking oil - 1 tablespoon
  • fresh cilantro - 2 tablespoons, chopped
  • grated cheese (mozzarella or cheddar) - 50 grams
  • lemon juice - 1 tablespoon

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a pan, heat the cooking oil over medium heat and add cumin seeds. Sauté until they start to splutter.
  3. Add the chopped onion and sauté until golden brown.
  4. Add the ginger, garlic, and green chili, and cook for another 2 minutes.
  5. Stir in the pureed tomato, coriander powder, turmeric powder, and salt. Cook until the mixture thickens and the oil separates, about 5-7 minutes.
  6. Add the drained chickpeas to the pan, mix well, and cook for another 2 minutes.
  7. Stir in the lemon juice and chopped cilantro, then remove from heat.
  8. Transfer the chickpea mixture to a baking dish and spread it evenly.
  9. Sprinkle grated cheese on top of the chickpea mixture.
  10. Bake in the preheated oven for 20 minutes, or until the cheese is melted and bubbly.
  11. Remove from the oven and let it cool for a few minutes before serving.
