- Tomato - 1 medium (chopped)
- Green chili - 1 (slit)
- Ginger-garlic paste - 1 teaspoon
- Cumin seeds - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Garam masala - 1 teaspoon
- Salt - to taste
- Vegetable oil - 2 tablespoons
- Fresh coriander leaves - 2 tablespoons (chopped)
- Water - 2 cups
- Lemon juice - 1 tablespoon
Steps
- Preheat the oven to 180°C (350°F).
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
- In a large oven-safe pan, heat the vegetable oil over medium heat. Add cumin seeds and let them sizzle.
- Add sliced onions and sauté until golden brown. Then, add ginger-garlic paste and green chili; cook for another minute.
- Stir in chopped tomatoes, turmeric powder, garam masala, and salt. Cook until the tomatoes soften.
- Add the rinsed chickpeas and sauté for 2-3 minutes.
- Drain the soaked rice and add it to the pan, stirring gently to combine all ingredients.
- Pour in 2 cups of water and bring it to a boil, then reduce heat and cover with a lid for about 10 minutes until rice is partially cooked.
- Remove from heat, drizzle lemon juice, and sprinkle chopped coriander leaves on top.
- Cover the pan tightly with foil and transfer it to the preheated oven. Bake for 15-20 minutes until the rice is fully cooked and fluffy.
- Remove from the oven, let it sit for 5 minutes, then fluff with a fork and serve hot.
