Ingredients

  • Cauliflower - 300 grams
  • Onion - 1 medium, finely chopped

  • Green peas - 50 grams
  • Carrot - 1 medium, grated
  • Ginger - 1 teaspoon, grated
  • Garlic - 2 cloves, minced
  • Cumin seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Garam masala - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Olive oil - 2 tablespoons
  • Fresh coriander leaves - for garnish

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Wash and chop the cauliflower into florets, then pulse in a food processor until it resembles rice.
  3. In a large bowl, combine the cauliflower rice, chopped onion, diced tomato, green peas, grated carrot, ginger, garlic, cumin seeds, turmeric powder, garam masala, coriander powder, salt, and black pepper.
  4. Drizzle the olive oil over the mixture and mix well until all ingredients are evenly coated.
  5. Transfer the mixture to a baking dish, spreading it out evenly.
  6. Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes.
  7. Remove the foil and bake for an additional 10 minutes until the top is slightly golden.
  8. Garnish with fresh coriander leaves and serve hot.
