- Green peas - 50 grams
- Carrot - 1 medium, grated
- Ginger - 1 teaspoon, grated
- Garlic - 2 cloves, minced
- Cumin seeds - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Garam masala - 1 teaspoon
- Coriander powder - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Olive oil - 2 tablespoons
- Fresh coriander leaves - for garnish
Steps
- Preheat the oven to 180°C (350°F).
- Wash and chop the cauliflower into florets, then pulse in a food processor until it resembles rice.
- In a large bowl, combine the cauliflower rice, chopped onion, diced tomato, green peas, grated carrot, ginger, garlic, cumin seeds, turmeric powder, garam masala, coriander powder, salt, and black pepper.
- Drizzle the olive oil over the mixture and mix well until all ingredients are evenly coated.
- Transfer the mixture to a baking dish, spreading it out evenly.
- Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes.
- Remove the foil and bake for an additional 10 minutes until the top is slightly golden.
- Garnish with fresh coriander leaves and serve hot.
