  • Mixed vegetables (carrots, peas, beans) - 150 grams
  • Onion - 1 medium, finely chopped
  • Tomato - 1 medium, chopped
  • Bisi Bele Bath powder - 2 tablespoons
  • Turmeric powder - 1/2 teaspoon
  • Mustard seeds - 1 teaspoon
  • Cumin seeds - 1 teaspoon
  • Curry leaves - 8-10 leaves
  • Ginger - 1 inch, grated
  • Garlic - 3 cloves, minced
  • Coconut milk - 200 ml
  • Vegetable broth - 300 ml
  • Salt - to taste
  • Oil - 1 tablespoon
  • Fresh coriander - for garnish

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Rinse the basmati rice and toor dal together under cold water until the water runs clear. Soak them in water for 15-20 minutes.
  3. In a large skillet, heat the oil over medium heat. Add mustard seeds and cumin seeds; allow them to splutter.
  4. Add chopped onions, garlic, and ginger, and sauté until the onions are translucent.
  5. Stir in the chopped tomatoes, mixed vegetables, turmeric powder, and Bisi Bele Bath powder. Cook for 5-7 minutes until the vegetables are slightly tender.
  6. Drain the soaked rice and dal, and add them to the skillet. Mix well to combine all ingredients.
  7. Pour in the coconut milk and vegetable broth, and add salt to taste. Stir everything together and bring it to a gentle simmer.
  8. Transfer the mixture to a baking dish and cover it with aluminum foil.
  9. Bake in the preheated oven for 30-35 minutes or until the rice and dal are fully cooked and the liquid is absorbed.
  10. Remove from the oven, let it sit for a few minutes, then fluff with a fork and garnish with fresh coriander before serving.
