- Cumin powder - 1/2 teaspoon
- Garam masala - 1/2 teaspoon
- Red chili powder - 1/2 teaspoon (adjust to taste)
- Salt - 1 teaspoon (adjust to taste)
- Oil - 1 tablespoon (cooking or olive oil)
- Fresh cilantro - for garnish, chopped
Steps
- Preheat the oven to 200°C (400°F).
- Wash the okra thoroughly and pat them dry. Trim the ends and cut them into 2-3 cm pieces.
- In a mixing bowl, combine the chopped okra, onion, tomato, ginger, garlic, turmeric powder, coriander powder, cumin powder, garam masala, red chili powder, salt, and oil. Mix well until the okra is well coated with the spices.
- Spread the mixture evenly on a baking tray lined with parchment paper.
- Bake in the preheated oven for 25-30 minutes, stirring halfway through, until the okra is tender and slightly crispy.
- Once done, remove from the oven and let it cool for a few minutes.
