Ingredients

  • Whole wheat flour - 150 grams
  • Tofu - 100 grams, crumbled
  • Onion - 1 medium, finely chopped
  • Green bell pepper - 1 small, finely chopped
  • Carrot - 1 small, grated
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Coriander powder - 1 teaspoon
  • Cumin powder - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh coriander leaves - 2 tablespoons, chopped
  • Olive oil - 1 tablespoon
  • Water - as needed for dough

Steps

  1. In a large mixing bowl, combine whole wheat flour and a pinch of salt. Gradually add water and knead until you form a soft, pliable dough. Cover the dough with a damp cloth and let it rest for 15 minutes.
  2. In a skillet, heat olive oil over medium heat. Add minced garlic and ginger, sautéing for a minute until fragrant.
  3. Add chopped onion and bell pepper to the skillet, cooking until softened. Stir in grated carrot and cook for another 2 minutes.
  4. Add crumbled tofu, coriander powder, cumin powder, turmeric powder, red chili powder, salt, and black pepper. Mix well and cook for 5-7 minutes, allowing the flavors to meld. Stir in chopped coriander leaves and remove from heat.
  5. Preheat your oven to 200°C (400°F).
  6. Divide the dough into 4 equal portions. Roll each portion into a circle about 5mm thick.
  7. Place a generous amount of the tofu and vegetable filling in the center of each dough circle. Fold the edges over the filling to create a pouch and seal well.
  8. Place the sealed pouches on a baking tray lined with parchment paper. Brush the tops lightly with olive oil.
  9. Bake in the preheated oven for 20-25 minutes or until golden brown and crispy.
  10. Remove from the oven and let cool for a few minutes before serving. Enjoy your Baked Baida Roti warm!
