Ingredients
- Whole wheat flour - 150 grams
- Tofu - 100 grams, crumbled
- Onion - 1 medium, finely chopped
- Green bell pepper - 1 small, finely chopped
- Carrot - 1 small, grated
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Coriander powder - 1 teaspoon
- Cumin powder - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh coriander leaves - 2 tablespoons, chopped
- Olive oil - 1 tablespoon
- Water - as needed for dough
Steps
- In a large mixing bowl, combine whole wheat flour and a pinch of salt. Gradually add water and knead until you form a soft, pliable dough. Cover the dough with a damp cloth and let it rest for 15 minutes.
- In a skillet, heat olive oil over medium heat. Add minced garlic and ginger, sautéing for a minute until fragrant.
- Add chopped onion and bell pepper to the skillet, cooking until softened. Stir in grated carrot and cook for another 2 minutes.
- Add crumbled tofu, coriander powder, cumin powder, turmeric powder, red chili powder, salt, and black pepper. Mix well and cook for 5-7 minutes, allowing the flavors to meld. Stir in chopped coriander leaves and remove from heat.
- Preheat your oven to 200°C (400°F).
- Divide the dough into 4 equal portions. Roll each portion into a circle about 5mm thick.
- Place a generous amount of the tofu and vegetable filling in the center of each dough circle. Fold the edges over the filling to create a pouch and seal well.
- Place the sealed pouches on a baking tray lined with parchment paper. Brush the tops lightly with olive oil.
- Bake in the preheated oven for 20-25 minutes or until golden brown and crispy.
