Ingredients

  • Whole wheat flour - 200 grams
  • Water - 100 ml
  • Salt - 1/2 teaspoon
  • Potatoes (boiled and mashed) - 200 grams
  • Cumin seeds - 1/2 teaspoon
  • Turmeric powder - 1/4 teaspoon
  • Red chili powder - 1/2 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Fresh cilantro (chopped) - 2 tablespoons
  • Ghee or oil - 1 tablespoon (for brushing)
  • Black sesame seeds - 1 tablespoon (optional)

Steps

  1. In a large bowl, mix the whole wheat flour, salt, and water to form a soft dough. Cover it with a damp cloth and let it rest for 20 minutes.
  2. In another bowl, combine the boiled and mashed potatoes with cumin seeds, turmeric powder, red chili powder, coriander powder, garam masala, and chopped cilantro. Mix well and set aside.
  3. Preheat the oven to 200°C (390°F).
  4. Divide the dough into 4 equal balls. Roll out one ball into a small circle on a floured surface, about 10 cm in diameter.
  5. Place a generous spoonful of the potato filling in the center of the rolled dough circle. Bring the edges together to seal the filling inside and gently flatten it.
  6. Roll the stuffed dough ball carefully into a larger circle (about 15 cm in diameter), taking care not to let the filling spill out.
  7. Place the rolled paratha on a baking tray lined with parchment paper. Repeat with the remaining dough and filling.
  8. Brush the tops of the parathas with ghee or oil, and sprinkle with black sesame seeds if desired.
  9. Bake in the preheated oven for 20-25 minutes, flipping halfway through, until both sides are golden brown and crispy.
  10. Remove from the oven, let cool slightly, and serve warm with yogurt or pickle.
