Baked Aloo Paratha

Ingredients
- Whole wheat flour - 200 grams
- Water - 100 ml
- Salt - 1/2 teaspoon
- Potatoes (boiled and mashed) - 200 grams
- Cumin seeds - 1/2 teaspoon
- Turmeric powder - 1/4 teaspoon
- Red chili powder - 1/2 teaspoon
- Coriander powder - 1 teaspoon
- Garam masala - 1/2 teaspoon
- Fresh cilantro (chopped) - 2 tablespoons
- Ghee or oil - 1 tablespoon (for brushing)
- Black sesame seeds - 1 tablespoon (optional)
Steps
- In a large bowl, mix the whole wheat flour, salt, and water to form a soft dough. Cover it with a damp cloth and let it rest for 20 minutes.
- In another bowl, combine the boiled and mashed potatoes with cumin seeds, turmeric powder, red chili powder, coriander powder, garam masala, and chopped cilantro. Mix well and set aside.
- Preheat the oven to 200°C (390°F).
- Divide the dough into 4 equal balls. Roll out one ball into a small circle on a floured surface, about 10 cm in diameter.
- Place a generous spoonful of the potato filling in the center of the rolled dough circle. Bring the edges together to seal the filling inside and gently flatten it.
- Roll the stuffed dough ball carefully into a larger circle (about 15 cm in diameter), taking care not to let the filling spill out.
- Place the rolled paratha on a baking tray lined with parchment paper. Repeat with the remaining dough and filling.
- Brush the tops of the parathas with ghee or oil, and sprinkle with black sesame seeds if desired.
- Bake in the preheated oven for 20-25 minutes, flipping halfway through, until both sides are golden brown and crispy.
- Remove from the oven, let cool slightly, and serve warm with yogurt or pickle.
