Ingredients

  • Potatoes - 300 grams
  • Onion - 1 medium, finely chopped
  • Green chili - 1, finely chopped
  • Ginger - 1 teaspoon, grated
  • Coriander powder - 1 teaspoon
  • Cumin powder - 1/2 teaspoon
  • Garam masala - 1/2 teaspoon
  • Salt - to taste
  • Fresh coriander leaves - 2 tablespoons, chopped
  • Whole wheat flour - 100 grams
  • Water - as needed
  • Olive oil - 1 tablespoon
  • Black sesame seeds - 1 tablespoon (for garnish)

Steps

  1. Preheat the oven to 190°C (375°F).
  2. Boil the potatoes in salted water until tender, about 15-20 minutes. Drain and let cool.
  3. In a pan, heat olive oil over medium heat and sauté the chopped onion until golden brown.
  4. Add the green chili and grated ginger, cooking for an additional 1-2 minutes.
  5. Peel the boiled potatoes and mash them in a bowl. Add the sautéed onion mixture, coriander powder, cumin powder, garam masala, salt, and fresh coriander leaves. Mix well.
  6. In a separate bowl, combine the whole wheat flour and a pinch of salt. Gradually add water to form a soft dough. Knead for a few minutes until smooth.
  7. Divide the dough into two equal portions. Roll each portion into a ball and flatten it into a disc about 1/4 inch thick.
  8. Place a generous amount of the potato filling in the center of each disc, fold the edges over to seal, and gently shape into a round patty.
  9. Place the patties on a baking tray lined with parchment paper. Brush the tops with olive oil and sprinkle with black sesame seeds.
  10. Bake in the preheated oven for 25-30 minutes or until golden brown and crispy.
  11. Remove from the oven and let cool for a few minutes before serving.
