Ingredients

  • Acorn Squash - 1 medium
  • Olive Oil - 2 tablespoons
  • Cumin Powder - 1 teaspoon
  • Coriander Powder - 1 teaspoon
  • Turmeric Powder - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black Pepper - 1/4 teaspoon
  • Chili Powder - 1/4 teaspoon
  • Fresh Cilantro - 2 tablespoons, chopped

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Cut the acorn squash in half and scoop out the seeds.
  3. In a small bowl, mix olive oil, cumin powder, coriander powder, turmeric powder, salt, black pepper, and chili powder.
  4. Brush the spice mixture evenly over the cut sides of the acorn squash halves.
  5. Place the squash halves cut-side down on a baking sheet lined with parchment paper.
  6. Bake in the preheated oven for 25-30 minutes or until the squash is tender.
  7. Remove from the oven and let it cool for a few minutes before flipping them cut-side up.
