Ingredients
- Bajra (pearl millet) - 1 cup
- Moong dal (split green gram) - 1/4 cup
- Onion - 1 medium, finely chopped
- Tomato - 1 medium, finely chopped
- Ginger - 1 inch, grated
- Green chili - 1, finely chopped
- Cumin seeds - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Coriander powder - 1 teaspoon
- Salt - to taste
- Fresh coriander leaves - 2 tablespoons, chopped
- Water - 3 cups
- Whole wheat burger buns - 2
- Lettuce leaves - 2
- Sliced cucumber - 1/2
- Sliced tomato - 1/2
- Yogurt - 2 tablespoons (optional)
Steps
- Rinse the bajra and moong dal under running water until the water runs clear. Soak them together in water for 30 minutes.
- In a pressure cooker, heat a little oil and add cumin seeds. Once they splutter, add the chopped onions, ginger, and green chili. Sauté until the onions turn golden brown.
- Add the chopped tomatoes, turmeric powder, coriander powder, and salt. Cook until the tomatoes soften.
- Drain the soaked bajra and moong dal, then add them to the pressure cooker along with 3 cups of water. Stir well.
- Close the lid and cook for 3-4 whistles on medium heat. Once done, let the pressure release naturally.
- Open the lid, add chopped coriander leaves, and mash the mixture slightly to form a thick khichdi consistency.
- Toast the whole wheat burger buns on a pan until golden brown.
- Assemble the burgers by placing a generous portion of the bajra khichdi mixture on the bottom half of the bun. Top it with lettuce, sliced cucumber, and tomato.
- Optionally, add a dollop of yogurt on top before closing the burger with the top half of the bun.
- Serve immediately and enjoy your healthy Bajra Khichdi Burger.
