Ingredients

  • Bajra (pearl millet) - 1 cup
  • Moong dal (split green gram) - 1/4 cup
  • Onion - 1 medium, finely chopped
  • Tomato - 1 medium, finely chopped
  • Ginger - 1 inch, grated
  • Green chili - 1, finely chopped
  • Cumin seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Coriander powder - 1 teaspoon
  • Salt - to taste
  • Fresh coriander leaves - 2 tablespoons, chopped
  • Water - 3 cups
  • Whole wheat burger buns - 2
  • Lettuce leaves - 2
  • Sliced cucumber - 1/2
  • Sliced tomato - 1/2
  • Yogurt - 2 tablespoons (optional)

Steps

  1. Rinse the bajra and moong dal under running water until the water runs clear. Soak them together in water for 30 minutes.
  2. In a pressure cooker, heat a little oil and add cumin seeds. Once they splutter, add the chopped onions, ginger, and green chili. Sauté until the onions turn golden brown.
  3. Add the chopped tomatoes, turmeric powder, coriander powder, and salt. Cook until the tomatoes soften.
  4. Drain the soaked bajra and moong dal, then add them to the pressure cooker along with 3 cups of water. Stir well.
  5. Close the lid and cook for 3-4 whistles on medium heat. Once done, let the pressure release naturally.
  6. Open the lid, add chopped coriander leaves, and mash the mixture slightly to form a thick khichdi consistency.
  7. Toast the whole wheat burger buns on a pan until golden brown.
  8. Assemble the burgers by placing a generous portion of the bajra khichdi mixture on the bottom half of the bun. Top it with lettuce, sliced cucumber, and tomato.
  9. Optionally, add a dollop of yogurt on top before closing the burger with the top half of the bun.
  10. Serve immediately and enjoy your healthy Bajra Khichdi Burger.
