  • Plant-based milk - 100 ml
  • Olive oil - 1 tablespoon
  • Bell pepper (diced) - 1/2 cup
  • Red onion (sliced) - 1/2 cup
  • Tomato (sliced) - 1 medium
  • Spinach (fresh) - 1 cup
  • Oregano - 1 teaspoon
  • Chili flakes - 1/2 teaspoon
  • Fresh cilantro (chopped) - for garnish

Steps

  1. In a mixing bowl, combine whole wheat flour, salt, turmeric powder, and water. Knead to form a soft dough, cover, and let it rest for 15 minutes.
  2. In another bowl, mix chickpea flour, nutritional yeast, black salt, and plant-based milk to create a smooth batter resembling scrambled eggs.
  3. Heat olive oil in a non-stick pan over medium heat. Roll out the rested dough into two flat rounds (about 6 inches in diameter).
  4. Cook each flatbread on the pan for 2-3 minutes on each side until lightly golden. Remove from the pan and set aside.
  5. In the same pan, add the chickpea batter and cook for 5 minutes, stirring occasionally until it thickens.
  6. Spread the thickened chickpea batter over each flatbread, then layer with bell pepper, red onion, tomato, and spinach.
  7. Sprinkle oregano and chili flakes on top, then cover the pan and cook for another 5-7 minutes until the vegetables are tender.
  8. Garnish with fresh cilantro before slicing and serving.
