- Chickpea flour - 50 grams
- Plant-based milk - 100 ml
- Olive oil - 1 tablespoon
- Bell pepper (diced) - 1/2 cup
- Red onion (sliced) - 1/2 cup
- Tomato (sliced) - 1 medium
- Spinach (fresh) - 1 cup
- Oregano - 1 teaspoon
- Chili flakes - 1/2 teaspoon
- Fresh cilantro (chopped) - for garnish
Steps
- In a mixing bowl, combine whole wheat flour, salt, turmeric powder, and water. Knead to form a soft dough, cover, and let it rest for 15 minutes.
- In another bowl, mix chickpea flour, nutritional yeast, black salt, and plant-based milk to create a smooth batter resembling scrambled eggs.
- Heat olive oil in a non-stick pan over medium heat. Roll out the rested dough into two flat rounds (about 6 inches in diameter).
- Cook each flatbread on the pan for 2-3 minutes on each side until lightly golden. Remove from the pan and set aside.
- In the same pan, add the chickpea batter and cook for 5 minutes, stirring occasionally until it thickens.
- Spread the thickened chickpea batter over each flatbread, then layer with bell pepper, red onion, tomato, and spinach.
- Sprinkle oregano and chili flakes on top, then cover the pan and cook for another 5-7 minutes until the vegetables are tender.
- Garnish with fresh cilantro before slicing and serving.
