- Chickpeas - 200 grams (cooked)
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Green chili - 1, finely chopped
- Coriander powder - 1 teaspoon
- Cumin powder - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Salt - to taste
- Fresh coriander leaves - 2 tablespoons, chopped
- Bread crumbs - 50 grams
- Whole wheat flour - 100 grams (for roti)
- Water - as needed for dough
- Oil - for shallow frying
- Lettuce leaves - 2
- Tomato - 1, sliced
- Cucumber - 1, sliced
- Vegan mayonnaise - 2 tablespoons
Steps
- In a mixing bowl, mash the cooked chickpeas with a fork until mostly smooth, leaving some chunks for texture.
- Add the chopped onion, minced garlic, grated ginger, green chili, coriander powder, cumin powder, turmeric powder, salt, and chopped coriander leaves to the mashed chickpeas. Mix well.
- Stir in the bread crumbs until the mixture holds together. Form into two equal-sized patties.
- In a skillet, heat a tablespoon of oil over medium heat. Cook the patties for about 4-5 minutes on each side until golden brown and crispy. Remove and set aside.
- In a separate bowl, mix whole wheat flour with enough water to make a soft dough. Divide into two equal portions and roll each into a thin roti.
- Cook the rotis on a hot griddle for about 1-2 minutes on each side until cooked through and slightly charred.
- To assemble the burger, spread a tablespoon of vegan mayonnaise on each roti. Place a lettuce leaf, followed by the chickpea patty, sliced tomato, and cucumber on top. Top with another roti.
- Serve immediately with your favorite dipping sauce or chutney.
