Ingredients

  • Chickpeas - 200 grams (cooked)
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Green chili - 1, finely chopped
  • Coriander powder - 1 teaspoon
  • Cumin powder - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Salt - to taste
  • Fresh coriander leaves - 2 tablespoons, chopped
  • Bread crumbs - 50 grams
  • Whole wheat flour - 100 grams (for roti)
  • Water - as needed for dough
  • Oil - for shallow frying
  • Lettuce leaves - 2
  • Tomato - 1, sliced
  • Cucumber - 1, sliced
  • Vegan mayonnaise - 2 tablespoons

Steps

  1. In a mixing bowl, mash the cooked chickpeas with a fork until mostly smooth, leaving some chunks for texture.
  2. Add the chopped onion, minced garlic, grated ginger, green chili, coriander powder, cumin powder, turmeric powder, salt, and chopped coriander leaves to the mashed chickpeas. Mix well.
  3. Stir in the bread crumbs until the mixture holds together. Form into two equal-sized patties.
  4. In a skillet, heat a tablespoon of oil over medium heat. Cook the patties for about 4-5 minutes on each side until golden brown and crispy. Remove and set aside.
  5. In a separate bowl, mix whole wheat flour with enough water to make a soft dough. Divide into two equal portions and roll each into a thin roti.
  6. Cook the rotis on a hot griddle for about 1-2 minutes on each side until cooked through and slightly charred.
  7. To assemble the burger, spread a tablespoon of vegan mayonnaise on each roti. Place a lettuce leaf, followed by the chickpea patty, sliced tomato, and cucumber on top. Top with another roti.
  8. Serve immediately with your favorite dipping sauce or chutney.
