- Eggplant - 1 medium (about 250g)
- Tahini - 2 tablespoons (30g)
- Lemon juice - 1 tablespoon (15ml)
- Garlic - 1 clove, minced
- Ground cumin - 1 teaspoon (5g)
- Paprika - 1 teaspoon (5g)
- Salt - 1/2 teaspoon (2g)
- Black pepper - 1/4 teaspoon (1g)
- Fresh cilantro - 2 tablespoons, chopped
- Skewers - 4 (soaked in water if wooden)
- Olive oil - 2 tablespoons (30ml)
Steps
- Preheat the grill to medium-high heat.
- Prick the eggplant with a fork in several places and place it on the grill. Grill for about 25-30 minutes, turning occasionally, until the skin is charred and the flesh is soft.
- Remove the eggplant from the grill and let it cool for 10 minutes. Once cooled, peel off the skin and scoop the flesh into a mixing bowl.
- Add tahini, lemon juice, minced garlic, ground cumin, paprika, salt, and black pepper to the eggplant flesh. Mix until well combined and smooth.
- Preheat your grill again if needed. Thread the baba ganoush mixture onto soaked skewers, shaping them into kebabs.
- Brush the kebabs with olive oil and grill for about 5-7 minutes on each side, or until they are golden brown and slightly charred.
- Remove from the grill and sprinkle with chopped cilantro before serving.
