Ingredients

  • Tomatoes - 300 grams, chopped
  • Green chilies - 2, slit
  • Turmeric powder - 1/2 teaspoon
  • Ginger paste - 1 teaspoon
  • Garlic paste - 1 teaspoon
  • Mustard oil - 2 tablespoons
  • Coriander powder - 1 teaspoon
  • Cumin powder - 1 teaspoon
  • Salt - to taste
  • Water - 500 ml
  • Fresh coriander leaves - for garnish

Steps

  1. Heat mustard oil in a pan over medium heat until it starts to smoke slightly.
  2. Add ginger and garlic paste, and sauté for 1-2 minutes until fragrant.
  3. Stir in the chopped tomatoes, green chilies, turmeric powder, coriander powder, cumin powder, and salt. Cook until the tomatoes soften and start to break down, about 5-7 minutes.
  4. Add water to the pan and bring it to a gentle boil. Let it simmer for 10-15 minutes to allow the flavors to meld together.
  5. Taste and adjust seasoning as needed. If you prefer a tangier flavor, you can add a splash of lemon juice.
  6. Once the curry has reached your desired consistency, remove from heat and garnish with fresh coriander leaves.
  7. Serve hot with steamed rice.
