Ingredients

  • Anchovies - 100 grams
  • Sweet potato - 200 grams
  • Coconut oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Fresh coriander - 2 tablespoons, chopped
  • Cumin powder - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Peel and slice the sweet potato into 1 cm thick rounds. Toss them in a bowl with 1 tablespoon of coconut oil, salt, and pepper.
  3. Spread the sweet potato slices on a baking sheet and roast in the oven for 20 minutes, turning halfway through until they are tender and slightly crispy.
  4. In a skillet, heat the remaining tablespoon of coconut oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
  5. Add the anchovies, cumin powder, and turmeric powder to the skillet, cooking for another 2-3 minutes until the anchovies start to break down.
  6. Remove the skillet from heat and stir in lemon juice and fresh coriander.
  7. Once the sweet potato rounds are done, remove them from the oven and top each round with the anchovy mixture.
  8. Serve immediately, garnished with additional coriander if desired.
