- Anchovies - 100 grams
- Sweet potato - 200 grams
- Coconut oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Fresh coriander - 2 tablespoons, chopped
- Cumin powder - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Lemon juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- Preheat the oven to 200°C (400°F).
- Peel and slice the sweet potato into 1 cm thick rounds. Toss them in a bowl with 1 tablespoon of coconut oil, salt, and pepper.
- Spread the sweet potato slices on a baking sheet and roast in the oven for 20 minutes, turning halfway through until they are tender and slightly crispy.
- In a skillet, heat the remaining tablespoon of coconut oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
- Add the anchovies, cumin powder, and turmeric powder to the skillet, cooking for another 2-3 minutes until the anchovies start to break down.
- Remove the skillet from heat and stir in lemon juice and fresh coriander.
- Once the sweet potato rounds are done, remove them from the oven and top each round with the anchovy mixture.
- Serve immediately, garnished with additional coriander if desired.
