- Basmati rice - 200 grams
- Chicken, cut into pieces - 250 grams
- Onion, thinly sliced - 1 medium
- Tomato, chopped - 1 medium
- Yogurt - 100 grams
- Ginger-garlic paste - 1 tablespoon
- Biryani masala - 2 teaspoons
- Cilantro, chopped - 2 tablespoons
- Mint leaves, chopped - 2 tablespoons
- Green chilies, slit - 2
- Lemon juice - 1 tablespoon
- Ghee (clarified butter) - 2 tablespoons
- Salt - to taste
- Water - 400 ml
- Whole spices (bay leaf, cinnamon stick, cloves) - 1 each
Steps
- Rinse the basmati rice under cold water until the water runs clear. Soak it in water for 30 minutes, then drain.
- In a bowl, mix the chicken pieces with yogurt, ginger-garlic paste, biryani masala, lemon juice, and salt. Marinate for at least 30 minutes.
- In a heavy-bottomed pot or Dutch oven, heat ghee over medium heat. Add whole spices (bay leaf, cinnamon, cloves) and sauté until fragrant.
- Add the sliced onions and sauté until golden brown. Then, add the chopped tomatoes and green chilies, cooking until the tomatoes soften.
- Stir in the marinated chicken and cook for about 10-12 minutes, until the chicken is browned and cooked through.
- Add the soaked and drained rice to the pot, followed by chopped cilantro and mint leaves. Gently mix everything together.
- Pour in the water, ensuring the rice is submerged. Bring to a boil, then reduce the heat to low, cover, and cook for 20 minutes.
- After 20 minutes, turn off the heat and let it rest for another 10 minutes without lifting the lid.
- Fluff the biryani gently with a fork and serve hot, garnished with extra cilantro and mint.
