Ingredients
- Potatoes - 400 grams
- Green peas - 100 grams
- Onion - 1 medium, finely chopped
- Ginger - 1 inch, grated
- Green chili - 1, finely chopped
- Coriander leaves - 2 tablespoons, chopped
- Cumin powder - 1 teaspoon
- Garam masala - 1 teaspoon
- Salt - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Oil - 2 tablespoons (for frying)
- Burger buns - 2
- Tomato - 1, sliced
- Lettuce leaves - 2
- Vegan mayonnaise - 2 tablespoons
- Chutney (mint or tamarind) - 2 tablespoons
Steps
- Boil the potatoes in salted water until tender, about 15-20 minutes. Drain and let cool.
- In a pan, heat 1 tablespoon of oil and sauté the chopped onions, ginger, and green chili until the onions are translucent.
- In a bowl, mash the boiled potatoes and add the sautéed onion mixture, green peas, coriander leaves, cumin powder, garam masala, salt, and turmeric powder. Mix well.
- Shape the mixture into two equal patties.
- Heat the remaining oil in a pan over medium heat. Fry the patties until golden brown and crispy, about 4-5 minutes on each side.
- To assemble the burgers, spread vegan mayonnaise on the bottom half of each bun, place a lettuce leaf, add the potato patty, top with sliced tomato, and a drizzle of chutney. Cover with the top half of the bun.
- Serve immediately with extra chutney on the side.
