  • Green chili - 1, slit
  • Ginger - 1 teaspoon, grated
  • Cumin seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Salt - to taste
  • Oil (preferably mustard or vegetable) - 2 tablespoons
  • Fresh coriander leaves - for garnish

Steps

  1. Peel and dice the potatoes into small cubes. Chop the tomatoes and onion finely.
  2. Heat oil in a pan over medium heat. Add cumin seeds and allow them to splutter.
  3. Add the chopped onions and sauté until they turn golden brown.
  4. Stir in the grated ginger and slit green chili, cooking for another minute until fragrant.
  5. Add the diced potatoes to the pan and mix well with the spices.
  6. Sprinkle turmeric powder, coriander powder, and salt. Stir to coat the potatoes evenly.
  7. Add the chopped tomatoes and mix everything together. Cover the pan and cook for about 10-12 minutes, stirring occasionally until the potatoes are tender.
  8. Once the potatoes are cooked, sprinkle garam masala over the top and mix gently.
  9. Remove from heat and garnish with fresh coriander leaves before serving.
