- Green chili - 1, slit
- Ginger - 1 teaspoon, grated
- Cumin seeds - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Coriander powder - 1 teaspoon
- Garam masala - 1/2 teaspoon
- Salt - to taste
- Oil (preferably mustard or vegetable) - 2 tablespoons
- Fresh coriander leaves - for garnish
Steps
- Peel and dice the potatoes into small cubes. Chop the tomatoes and onion finely.
- Heat oil in a pan over medium heat. Add cumin seeds and allow them to splutter.
- Add the chopped onions and sauté until they turn golden brown.
- Stir in the grated ginger and slit green chili, cooking for another minute until fragrant.
- Add the diced potatoes to the pan and mix well with the spices.
- Sprinkle turmeric powder, coriander powder, and salt. Stir to coat the potatoes evenly.
- Add the chopped tomatoes and mix everything together. Cover the pan and cook for about 10-12 minutes, stirring occasionally until the potatoes are tender.
- Once the potatoes are cooked, sprinkle garam masala over the top and mix gently.
- Remove from heat and garnish with fresh coriander leaves before serving.
