Ingredients

  • Potatoes - 300 grams
  • Tomatoes - 200 grams
  • Onion - 1 medium, finely chopped
  • Green chili - 1, slit
  • Ginger - 1 teaspoon, grated
  • Cumin seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Salt - to taste
  • Oil - 2 tablespoons
  • Fresh coriander leaves - for garnish

Steps

  1. Peel and chop the potatoes into small cubes. Boil them in water for about 10 minutes until they are just tender, then drain and set aside.
  2. Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
  3. Add the chopped onions and sauté until they turn golden brown.
  4. Stir in the grated ginger and slit green chili, cooking for another minute.
  5. Add the chopped tomatoes and cook until they soften and begin to break down.
  6. Sprinkle in the turmeric powder, red chili powder, coriander powder, and salt. Mix well and cook for 2-3 minutes.
  7. Add the boiled potatoes to the pan, stirring gently to coat them with the spice mixture.
  8. Pour in a little water if the mixture is too thick, cover, and let it simmer for 5-7 minutes.
  9. Finish with garam masala and mix thoroughly. Cook for another minute.
  10. Garnish with fresh coriander leaves before serving.
