Ingredients

  • Potatoes - 300 grams, peeled and diced
  • Tomatoes - 250 grams, chopped
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 inch, grated
  • Green chili - 1, slit
  • Cumin seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Salt - to taste
  • Oil - 2 tablespoons
  • Fresh coriander leaves - for garnish
  • Water - 1 cup

Steps

  1. Heat oil in a pan over medium heat, add cumin seeds and let them splutter.
  2. Add finely chopped onion and sauté until translucent.
  3. Stir in minced garlic, grated ginger, and slit green chili; cook for 1-2 minutes until fragrant.
  4. Add chopped tomatoes, turmeric powder, red chili powder, coriander powder, and salt; cook until tomatoes soften.
  5. Add diced potatoes and mix well with the tomato mixture.
  6. Pour in 1 cup of water, cover the pan, and let it simmer for about 15-20 minutes until potatoes are tender.
  7. Once cooked, sprinkle garam masala over the dish and stir gently.
  8. Garnish with fresh coriander leaves before serving.
