- Potatoes - 300 grams
- Onion - 1 medium, finely chopped

- Green chili - 1, finely chopped
- Ginger - 1 teaspoon, grated
- Garlic - 2 cloves, minced
- Cumin seeds - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Coriander powder - 1 teaspoon
- Garam masala - 1/2 teaspoon
- Salt - to taste
- Fresh coriander leaves - for garnish
- Oil - for cooking (about 2 tablespoons)
- Puris (gluten-free) - 6 pieces
Steps
- Boil the potatoes in water until tender, about 15-20 minutes. Drain, peel, and mash them.
- Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
- Add chopped onions and sauté until they turn golden brown.
- Stir in the grated ginger, minced garlic, and green chili. Cook for 1-2 minutes until fragrant.
- Add the chopped tomato and cook until it softens, about 3-4 minutes.
- Sprinkle in turmeric, coriander powder, and salt. Mix well and cook for another 2 minutes.
- Add the mashed potatoes to the pan and mix until well incorporated with the spices.
- Stir in garam masala and cook for an additional 2-3 minutes. Remove from heat.
- Garnish with fresh coriander leaves.
- In a separate pan, heat oil for frying. Fry the puris until golden and puffed.
- Serve the Aloo Masala hot with crispy puris.
