Ingredients

  • Potatoes - 300 grams, peeled and cubed
  • Fresh spinach - 200 grams, washed and chopped
  • Onion - 1 medium, finely chopped
  • Tomato - 1 medium, finely chopped
  • Ginger - 1 teaspoon, grated
  • Garlic - 2 cloves, minced
  • Green chili - 1, slit (optional for heat)
  • Cumin seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Salt - to taste
  • Oil - 2 tablespoons
  • Water - 100 ml

Steps

  1. Heat oil in a pan over medium heat. Add cumin seeds and let them sizzle for a few seconds.
  2. Add the chopped onions and sauté until they turn golden brown.
  3. Stir in the minced garlic, grated ginger, and green chili. Cook for another minute until fragrant.
  4. Add the chopped tomatoes and cook until they soften and oil begins to separate from the mixture.
  5. Sprinkle in the turmeric powder, coriander powder, and salt. Mix well and cook for 2 minutes.
  6. Add the cubed potatoes and mix to coat them with the spices. Pour in the water, cover the pan, and cook for about 10 minutes until the potatoes are tender.
  7. Once the potatoes are cooked, add the chopped spinach and garam masala. Cook uncovered for an additional 5 minutes, stirring occasionally until the spinach is wilted and well combined.
  8. Taste and adjust seasoning if needed. Serve hot with rice or flatbreads.
