- Red chili powder - 1 teaspoon
- Garam masala - 1/2 teaspoon
- Salt - 1 teaspoon (to taste)
- Fresh coriander leaves - 2 tablespoons (chopped)
- Oil - for deep frying
Steps
- Peel and slice the potatoes into thin rounds, about 3-4 mm thick.
- In a mixing bowl, combine chickpea flour, rice flour, cumin seeds, coriander powder, turmeric powder, red chili powder, garam masala, and salt.
- Gradually add water to the dry ingredients, whisking to form a smooth batter. The consistency should be thick enough to coat the potato slices.
- Add the sliced potatoes and chopped coriander leaves to the batter, ensuring all slices are well-coated.
- Heat oil in a deep frying pan over medium heat. To test if the oil is ready, drop a small amount of batter into the oil; it should sizzle and rise to the surface.
- Carefully drop coated potato slices into the hot oil, making sure not to overcrowd the pan.
- Fry the pakoras until they are golden brown and crispy, about 4-5 minutes, flipping them halfway through.
- Remove the pakoras with a slotted spoon and drain on paper towels to remove excess oil.
- Serve hot with mint chutney or tamarind sauce.
