Ingredients

  • Potatoes - 2 medium (approximately 300g)
  • Chickpea flour (besan) - 100g
  • Rice flour - 2 tablespoons (30g)
  • Water - 100ml (adjust as needed)
  • Cumin seeds - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Salt - 1 teaspoon (to taste)
  • Fresh coriander leaves - 2 tablespoons (chopped)
  • Oil - for deep frying

Steps

  1. Peel and slice the potatoes into thin rounds, about 3-4 mm thick.
  2. In a mixing bowl, combine chickpea flour, rice flour, cumin seeds, coriander powder, turmeric powder, red chili powder, garam masala, and salt.
  3. Gradually add water to the dry ingredients, whisking to form a smooth batter. The consistency should be thick enough to coat the potato slices.
  4. Add the sliced potatoes and chopped coriander leaves to the batter, ensuring all slices are well-coated.
  5. Heat oil in a deep frying pan over medium heat. To test if the oil is ready, drop a small amount of batter into the oil; it should sizzle and rise to the surface.
  6. Carefully drop coated potato slices into the hot oil, making sure not to overcrowd the pan.
  7. Fry the pakoras until they are golden brown and crispy, about 4-5 minutes, flipping them halfway through.
  8. Remove the pakoras with a slotted spoon and drain on paper towels to remove excess oil.
  9. Serve hot with mint chutney or tamarind sauce.
