- Potatoes - 300 grams, peeled and diced
- Fresh fenugreek leaves (methi) - 100 grams, washed and chopped
- Onion - 1 medium, finely chopped
- Tomato - 1 medium, finely chopped
- Green chili - 1, slit
- Turmeric powder - 1/2 teaspoon
- Cumin seeds - 1/2 teaspoon
- Coriander powder - 1 teaspoon
- Red chili powder - 1/2 teaspoon
- Salt - to taste
- Oil (preferably mustard or vegetable) - 2 tablespoons
- Water - 100 ml
Steps
- Heat the oil in a pan over medium heat. Add cumin seeds and let them splutter.
- Add the finely chopped onion and sauté until golden brown.
- Stir in the slit green chili and chopped tomato. Cook until the tomato softens.
- Add turmeric powder, coriander powder, red chili powder, and salt. Mix well and cook for 2-3 minutes.
- Add the diced potatoes and mix until they are coated with the spices.
- Pour in the water, cover the pan, and let it cook for about 10 minutes or until the potatoes are tender.
- Once the potatoes are cooked, add the chopped fenugreek leaves and mix well.
- Cook for an additional 5 minutes, stirring occasionally, until the methi wilts and everything is combined.
- Serve hot with roti or rice.
