Ingredients

  • Potatoes - 300 grams, peeled and diced
  • Fresh fenugreek leaves (methi) - 100 grams, washed and chopped
  • Onion - 1 medium, finely chopped
  • Tomato - 1 medium, finely chopped
  • Green chili - 1, slit
  • Turmeric powder - 1/2 teaspoon
  • Cumin seeds - 1/2 teaspoon
  • Coriander powder - 1 teaspoon
  • Red chili powder - 1/2 teaspoon
  • Salt - to taste
  • Oil (preferably mustard or vegetable) - 2 tablespoons
  • Water - 100 ml

Steps

  1. Heat the oil in a pan over medium heat. Add cumin seeds and let them splutter.
  2. Add the finely chopped onion and sauté until golden brown.
  3. Stir in the slit green chili and chopped tomato. Cook until the tomato softens.
  4. Add turmeric powder, coriander powder, red chili powder, and salt. Mix well and cook for 2-3 minutes.
  5. Add the diced potatoes and mix until they are coated with the spices.
  6. Pour in the water, cover the pan, and let it cook for about 10 minutes or until the potatoes are tender.
  7. Once the potatoes are cooked, add the chopped fenugreek leaves and mix well.
  8. Cook for an additional 5 minutes, stirring occasionally, until the methi wilts and everything is combined.
  9. Serve hot with roti or rice.
