Ingredients

  • Whole wheat flour - 200 grams
  • Boiled potatoes - 200 grams
  • Fresh fenugreek leaves (methi) - 50 grams
  • Cumin seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Salt - to taste
  • Oil - 2 tablespoons (for cooking)
  • Water - as needed for dough

Steps

  1. In a mixing bowl, combine the whole wheat flour and a pinch of salt. Gradually add water and knead into a soft dough. Cover and set aside for 15 minutes.
  2. In another bowl, mash the boiled potatoes. Add chopped fenugreek leaves, cumin seeds, turmeric powder, red chili powder, garam masala, and salt. Mix well to form a filling.
  3. Divide the dough into equal portions and roll each portion into a ball. Flatten each ball slightly.
  4. Take one dough ball, place a spoonful of the potato-fenugreek filling in the center, and fold the edges over to seal it. Gently flatten it with your fingers.
  5. Dust the stuffed dough ball with flour and roll it out into a circle, about 6-7 inches in diameter.
  6. Heat a tava or skillet over medium heat. Once hot, place the rolled paratha on the skillet.
  7. Cook for 1-2 minutes until small bubbles form on the surface, then flip it over. Drizzle a little oil around the edges and on top.
  8. Cook for another 1-2 minutes until golden brown, pressing gently with a spatula. Repeat the process for the remaining dough and filling.
  9. Serve hot with yogurt or pickle.
