- Green chili - 1, slit
- Turmeric powder - 1/2 teaspoon
- Cumin seeds - 1/2 teaspoon
- Coriander powder - 1 teaspoon
- Red chili powder - 1/2 teaspoon
- Garam masala - 1/2 teaspoon
- Salt - to taste
- Oil - 2 tablespoons
- Fresh coriander - for garnish
Steps
- Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
- Add the finely chopped onion and sauté until golden brown.
- Stir in the grated ginger and slit green chili, cooking for an additional minute.
- Add the diced potatoes and cauliflower florets, mixing well with the onion mixture.
- Sprinkle in turmeric, coriander powder, red chili powder, and salt, stirring to coat the vegetables evenly.
- Cover the pan and cook for about 10 minutes, stirring occasionally until the potatoes and cauliflower are tender.
- Add the chopped tomato and fenugreek leaves, mixing well. Cook uncovered for another 5 minutes.
- Finish with garam masala, stir gently, and allow to cook for an additional 2 minutes.
- Garnish with fresh coriander before serving.
