Ingredients

  • Green chili - 1, slit
  • Turmeric powder - 1/2 teaspoon
  • Cumin seeds - 1/2 teaspoon
  • Coriander powder - 1 teaspoon
  • Red chili powder - 1/2 teaspoon
  • Garam masala - 1/2 teaspoon
  • Salt - to taste
  • Oil - 2 tablespoons
  • Fresh coriander - for garnish

Steps

  1. Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
  2. Add the finely chopped onion and sauté until golden brown.
  3. Stir in the grated ginger and slit green chili, cooking for an additional minute.
  4. Add the diced potatoes and cauliflower florets, mixing well with the onion mixture.
  5. Sprinkle in turmeric, coriander powder, red chili powder, and salt, stirring to coat the vegetables evenly.
  6. Cover the pan and cook for about 10 minutes, stirring occasionally until the potatoes and cauliflower are tender.
  7. Add the chopped tomato and fenugreek leaves, mixing well. Cook uncovered for another 5 minutes.
  8. Finish with garam masala, stir gently, and allow to cook for an additional 2 minutes.
  9. Garnish with fresh coriander before serving.
