- Potatoes - 300 grams
- Fresh fenugreek leaves (methi) - 100 grams
- Onion - 1 medium, finely chopped
- Green chili - 1, finely chopped
- Ginger - 1 teaspoon, grated
- Cumin seeds - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1/2 teaspoon
- Garam masala - 1/2 teaspoon
- Salt - to taste
- Oil - 2 tablespoons
- Fresh coriander leaves - for garnish
Steps
- Peel and dice the potatoes into small cubes. Rinse the fenugreek leaves thoroughly and chop them coarsely.
- Heat oil in a pan over medium heat and add the cumin seeds. Once they start to sizzle, add the chopped onions and sauté until translucent.
- Add the grated ginger and chopped green chili to the pan, and sauté for another minute.
- Stir in the diced potatoes, turmeric powder, red chili powder, and salt. Mix well to coat the potatoes with spices.
- Cover the pan and cook for about 10 minutes, stirring occasionally, until the potatoes are tender.
- Add the chopped fenugreek leaves and garam masala to the pan. Mix well and cook for an additional 5 minutes until the leaves wilt and the flavors meld.
- Remove from heat and garnish with fresh coriander leaves before serving.
