Ingredients

  • Potatoes - 300 grams
  • Fresh fenugreek leaves (methi) - 100 grams
  • Onion - 1 medium, finely chopped
  • Green chili - 1, finely chopped
  • Ginger - 1 teaspoon, grated
  • Cumin seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1/2 teaspoon
  • Garam masala - 1/2 teaspoon
  • Salt - to taste
  • Oil - 2 tablespoons
  • Fresh coriander leaves - for garnish

Steps

  1. Peel and dice the potatoes into small cubes. Rinse the fenugreek leaves thoroughly and chop them coarsely.
  2. Heat oil in a pan over medium heat and add the cumin seeds. Once they start to sizzle, add the chopped onions and sauté until translucent.
  3. Add the grated ginger and chopped green chili to the pan, and sauté for another minute.
  4. Stir in the diced potatoes, turmeric powder, red chili powder, and salt. Mix well to coat the potatoes with spices.
  5. Cover the pan and cook for about 10 minutes, stirring occasionally, until the potatoes are tender.
  6. Add the chopped fenugreek leaves and garam masala to the pan. Mix well and cook for an additional 5 minutes until the leaves wilt and the flavors meld.
  7. Remove from heat and garnish with fresh coriander leaves before serving.
