- Green chili - 1, slit (optional)
- Turmeric powder - 1/2 teaspoon
- Cumin seeds - 1/2 teaspoon
- Coriander powder - 1 teaspoon
- Garam masala - 1/2 teaspoon
- Salt - to taste
- Fresh cilantro - for garnish
- Oil - 1 tablespoon
- Whole wheat flour - 150 grams (for roti)
- Water - as needed (for dough)

Steps
- In a mixing bowl, combine whole wheat flour, a pinch of salt, and enough water to form a soft dough. Knead for about 5 minutes and cover it with a damp cloth.
- Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
- Add finely chopped onions and sauté until they turn golden brown.
- Stir in grated ginger, minced garlic, and green chili. Sauté for another 2 minutes until fragrant.
- Add chopped tomatoes, turmeric powder, coriander powder, and salt. Cook until the tomatoes soften.
- Add diced potatoes and cauliflower florets to the pan, mix well, and cover with a lid. Cook for about 10-15 minutes, stirring occasionally, until the vegetables are tender.
- Sprinkle garam masala and mix well. Cook for an additional 2 minutes. Garnish with fresh cilantro.
- While the vegetable mixture is cooking, divide the dough into 4 equal portions. Roll each portion into a ball and flatten it.
- Roll each ball into a thin circle (roti) using a rolling pin, dusting with flour as needed.
- Heat a skillet over medium-high heat and cook each roti for about 1 minute on each side until they puff up and have golden brown spots.
- Serve the Aloo Gobi hot with the freshly made roti.
