Ingredients

  • Potatoes - 300 grams, peeled and diced
  • Cauliflower - 200 grams, cut into florets
  • Onion - 1 medium, finely chopped
  • Tomato - 1 medium, chopped
  • Ginger - 1 inch, grated
  • Garlic - 2 cloves, minced
  • Green chili - 1, slit (optional)
  • Turmeric powder - 1/2 teaspoon
  • Cumin seeds - 1/2 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Salt - to taste
  • Fresh cilantro - for garnish
  • Oil - 1 tablespoon
  • Whole wheat flour - 150 grams (for roti)
  • Water - as needed (for dough)
  • Salt - a pinch (for dough)

Steps

  1. In a mixing bowl, combine whole wheat flour, a pinch of salt, and enough water to form a soft dough. Knead for about 5 minutes and cover it with a damp cloth.
  2. Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
  3. Add finely chopped onions and sauté until they turn golden brown.
  4. Stir in grated ginger, minced garlic, and green chili. Sauté for another 2 minutes until fragrant.
  5. Add chopped tomatoes, turmeric powder, coriander powder, and salt. Cook until the tomatoes soften.
  6. Add diced potatoes and cauliflower florets to the pan, mix well, and cover with a lid. Cook for about 10-15 minutes, stirring occasionally, until the vegetables are tender.
  7. Sprinkle garam masala and mix well. Cook for an additional 2 minutes. Garnish with fresh cilantro.
  8. While the vegetable mixture is cooking, divide the dough into 4 equal portions. Roll each portion into a ball and flatten it.
  9. Roll each ball into a thin circle (roti) using a rolling pin, dusting with flour as needed.
  10. Heat a skillet over medium-high heat and cook each roti for about 1 minute on each side until they puff up and have golden brown spots.
  11. Serve the Aloo Gobi hot with the freshly made roti.
