- Potatoes - 300 grams, peeled and diced
- Cauliflower - 300 grams, cut into florets
- Onion - 1 medium, finely chopped
- Tomato - 1 medium, chopped
- Garlic - 2 cloves, minced
- Ginger - 1 inch, grated
- Green chili - 1, slit
- Turmeric powder - 1/2 teaspoon
- Cumin seeds - 1/2 teaspoon
- Coriander powder - 1 teaspoon
- Garam masala - 1/2 teaspoon
- Salt - to taste
- Oil - 2 tablespoons
- Fresh cilantro - for garnish
Steps
- Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
- Add the chopped onions and sauté until they turn golden brown.
- Stir in the minced garlic, grated ginger, and slit green chili. Cook for 1-2 minutes until fragrant.
- Add the chopped tomato and cook until it softens.
- Sprinkle in the turmeric powder, coriander powder, and salt. Mix well and cook for another minute.
- Add the diced potatoes and cauliflower florets to the pan. Mix to coat the vegetables with the spices.
- Pour in a small amount of water (about 50 ml) to help steam the vegetables. Cover the pan and cook for 15-20 minutes, stirring occasionally, until the potatoes and cauliflower are tender.
- Once cooked, sprinkle garam masala over the top and gently mix.
- Remove from heat and garnish with fresh cilantro before serving.
