Ingredients

  • Potatoes - 300 grams, peeled and diced
  • Cauliflower - 300 grams, cut into florets
  • Onion - 1 medium, finely chopped
  • Tomato - 1 medium, chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 inch, grated
  • Green chili - 1, slit
  • Turmeric powder - 1/2 teaspoon
  • Cumin seeds - 1/2 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Salt - to taste
  • Oil - 2 tablespoons
  • Fresh cilantro - for garnish

Steps

  1. Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
  2. Add the chopped onions and sauté until they turn golden brown.
  3. Stir in the minced garlic, grated ginger, and slit green chili. Cook for 1-2 minutes until fragrant.
  4. Add the chopped tomato and cook until it softens.
  5. Sprinkle in the turmeric powder, coriander powder, and salt. Mix well and cook for another minute.
  6. Add the diced potatoes and cauliflower florets to the pan. Mix to coat the vegetables with the spices.
  7. Pour in a small amount of water (about 50 ml) to help steam the vegetables. Cover the pan and cook for 15-20 minutes, stirring occasionally, until the potatoes and cauliflower are tender.
  8. Once cooked, sprinkle garam masala over the top and gently mix.
  9. Remove from heat and garnish with fresh cilantro before serving.
