- Basmati rice - 1 cup
- Potato (cubed) - 1 medium (about 150g)
- Cauliflower florets - 1 cup (about 100g)
- Onion (sliced) - 1 medium
- Tomato (chopped) - 1 medium
- Green peas - 1/4 cup (frozen or fresh)
- Ginger (grated) - 1 teaspoon
- Garlic (minced) - 1 teaspoon
- Cumin seeds - 1/2 teaspoon
- Turmeric powder - 1/2 teaspoon
- Coriander powder - 1 teaspoon
- Garam masala - 1/2 teaspoon
- Salt - to taste
- Water - 2 cups
- Cooking oil - 1 tablespoon
- Cilantro (for garnish) - a handful
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
- In a large pot, heat the cooking oil over medium heat. Add the cumin seeds and let them sizzle for a few seconds.
- Add the sliced onion and sauté until golden brown, about 5-7 minutes.
- Stir in the grated ginger and minced garlic, and cook for another minute until fragrant.
- Add the cubed potato and cauliflower florets, and sauté for 3-4 minutes, stirring occasionally.
- Mix in the chopped tomato, turmeric powder, coriander powder, and salt. Cook until the tomato softens, about 3 minutes.
- Add the green peas and the soaked, drained basmati rice to the pot, stirring gently to combine all ingredients.
- Pour in the water and bring to a boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer for 15 minutes.
- After 15 minutes, remove the pot from heat and let it sit (covered) for 5 more minutes.
- Fluff the rice with a fork, stir in garam masala, and garnish with fresh cilantro before serving.
