Ingredients

  • Whole wheat flour - 200 grams
  • Potato - 150 grams, boiled and mashed
  • Cauliflower - 100 grams, finely grated
  • Onion - 1 small, finely chopped
  • Green chili - 1, finely chopped
  • Ginger - 1 teaspoon, grated
  • Coriander powder - 1 teaspoon
  • Cumin powder - 1/2 teaspoon
  • Turmeric powder - 1/4 teaspoon
  • Garam masala - 1/2 teaspoon
  • Salt - to taste
  • Fresh coriander leaves - 2 tablespoons, chopped
  • Oil or ghee - for cooking
  • Water - as needed for dough

Steps

  1. In a mixing bowl, combine the whole wheat flour and a pinch of salt. Gradually add water and knead to form a soft dough. Cover with a damp cloth and let it rest for 20 minutes.
  2. In another bowl, mix the boiled and mashed potato, grated cauliflower, chopped onion, green chili, ginger, coriander powder, cumin powder, turmeric powder, garam masala, salt, and fresh coriander leaves until well combined.
  3. Divide the dough into equal balls (about 4). Roll out one ball into a small circle using a rolling pin.
  4. Place a generous amount of the filling in the center of the rolled dough. Fold the edges over the filling to seal it and gently flatten it.
  5. Roll out the stuffed ball carefully into a larger circle, ensuring the filling stays intact.
  6. Heat a tawa or skillet over medium heat. Place the rolled-out paratha and cook for 1-2 minutes until small bubbles appear.
  7. Flip the paratha and brush with oil or ghee. Cook for another 1-2 minutes until golden brown.
  8. Repeat the process for the remaining dough and filling.
  9. Serve hot with yogurt, pickle, or chutney.
