Ingredients

  • Potatoes - 300 grams, diced
  • Cauliflower - 200 grams, cut into florets
  • Onion - 1 medium, finely chopped
  • Tomato - 1 medium, pureed
  • Garlic - 2 cloves, minced
  • Ginger - 1-inch piece, grated
  • Green chili - 1, slit
  • Turmeric powder - 1/2 teaspoon
  • Cumin seeds - 1/2 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Salt - to taste
  • Vegetable oil - 2 tablespoons
  • Fresh cilantro - for garnish
  • Water - 100 ml

Steps

  1. Heat vegetable oil in a pan over medium heat.
  2. Add cumin seeds and let them sizzle for a few seconds.
  3. Add finely chopped onions and sauté until they turn golden brown.
  4. Stir in minced garlic, grated ginger, and slit green chili; cook for 2 minutes.
  5. Add the pureed tomato and cook until the oil separates from the mixture.
  6. Sprinkle in turmeric powder, coriander powder, and salt; mix well.
  7. Add the diced potatoes and cauliflower florets to the pan, stirring to coat with spices.
  8. Pour in the water, cover the pan, and let it simmer for about 15 minutes or until the vegetables are tender.
  9. Once cooked, sprinkle garam masala on top and stir gently.
  10. Garnish with fresh cilantro before serving.
