- Potatoes - 300 grams, diced
- Cauliflower - 200 grams, florets
- Onion - 1 medium, finely chopped
- Tomato - 1 medium, chopped
- Garlic - 3 cloves, minced
- Ginger - 1 inch, grated
- Green chili - 1, slit
- Vegetable oil - 2 tablespoons
- Cumin seeds - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Coriander powder - 1 teaspoon
- Garam masala - 1 teaspoon
- Salt - to taste
- Cilantro - for garnish, chopped
Steps
- Heat the vegetable oil in a pan over medium heat. Add cumin seeds and let them splutter.
- Add the chopped onion and sauté until golden brown.
- Stir in the minced garlic, grated ginger, and slit green chili. Cook for another 2 minutes.
- Add the chopped tomato and cook until soft and mushy.
- Stir in the turmeric powder, coriander powder, and salt. Mix well.
- Add the diced potatoes and cauliflower florets to the pan. Mix to coat the vegetables with the spices.
- Pour in 1 cup of water, cover the pan, and let it simmer for about 15 minutes or until the vegetables are tender.
- Once cooked, sprinkle garam masala over the curry and stir gently.
- Garnish with chopped cilantro and serve hot with rice or flatbread.
