Ingredients

  • Potatoes - 300 grams, diced
  • Cauliflower - 200 grams, florets
  • Onion - 1 medium, finely chopped
  • Tomato - 1 medium, chopped
  • Garlic - 3 cloves, minced
  • Ginger - 1 inch, grated
  • Green chili - 1, slit
  • Vegetable oil - 2 tablespoons
  • Cumin seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1 teaspoon
  • Salt - to taste
  • Cilantro - for garnish, chopped

Steps

  1. Heat the vegetable oil in a pan over medium heat. Add cumin seeds and let them splutter.
  2. Add the chopped onion and sauté until golden brown.
  3. Stir in the minced garlic, grated ginger, and slit green chili. Cook for another 2 minutes.
  4. Add the chopped tomato and cook until soft and mushy.
  5. Stir in the turmeric powder, coriander powder, and salt. Mix well.
  6. Add the diced potatoes and cauliflower florets to the pan. Mix to coat the vegetables with the spices.
  7. Pour in 1 cup of water, cover the pan, and let it simmer for about 15 minutes or until the vegetables are tender.
  8. Once cooked, sprinkle garam masala over the curry and stir gently.
  9. Garnish with chopped cilantro and serve hot with rice or flatbread.
