  • Garlic - 2 cloves, minced
  • Cumin seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Salt - to taste
  • Oil - 2 tablespoons
  • Fresh cilantro - for garnish

Steps

  1. Heat oil in a pan over medium heat and add cumin seeds. Once they splutter, add the chopped onions and sauté until golden brown.
  2. Add the grated ginger, minced garlic, and slit green chili to the pan. Cook for another 1-2 minutes until fragrant.
  3. Stir in the chopped tomato and cook until it softens, about 3-4 minutes.
  4. Add the diced potatoes and cauliflower florets to the pan. Sprinkle in the turmeric powder, coriander powder, and salt. Mix well to coat the vegetables with spices.
  5. Cover the pan and cook on low heat for about 15 minutes, stirring occasionally, until the vegetables are tender.
  6. Once cooked, sprinkle garam masala over the top and stir gently to combine.
  7. Garnish with fresh cilantro before serving.
