- Green chili - 1, slit

- Garlic - 2 cloves, minced
- Cumin seeds - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Coriander powder - 1 teaspoon
- Garam masala - 1/2 teaspoon
- Salt - to taste
- Oil - 2 tablespoons
- Fresh cilantro - for garnish
Steps
- Heat oil in a pan over medium heat and add cumin seeds. Once they splutter, add the chopped onions and sauté until golden brown.
- Add the grated ginger, minced garlic, and slit green chili to the pan. Cook for another 1-2 minutes until fragrant.
- Stir in the chopped tomato and cook until it softens, about 3-4 minutes.
- Add the diced potatoes and cauliflower florets to the pan. Sprinkle in the turmeric powder, coriander powder, and salt. Mix well to coat the vegetables with spices.
- Cover the pan and cook on low heat for about 15 minutes, stirring occasionally, until the vegetables are tender.
- Once cooked, sprinkle garam masala over the top and stir gently to combine.
- Garnish with fresh cilantro before serving.
