- Cauliflower - 200 grams, florets
- Onion - 1 medium, finely chopped
- Tomato - 1 medium, chopped
- Green chili - 1, slit (adjust to taste)
- Ginger - 1 teaspoon, grated
- Garlic - 2 cloves, minced
- Turmeric powder - 1/2 teaspoon
- Cumin seeds - 1/2 teaspoon
- Coriander powder - 1 teaspoon
- Garam masala - 1/2 teaspoon
- Salt - to taste
- Oil - 2 tablespoons
- Fresh cilantro - for garnish
- Lemon juice - 1 tablespoon
Steps
- Heat the oil in a large pan over medium heat. Add cumin seeds and let them sizzle for a few seconds.
- Add the chopped onions and sauté until they turn golden brown.
- Stir in the minced garlic, grated ginger, and slit green chili. Cook for another minute until fragrant.
- Add the diced potatoes and cauliflower florets to the pan. Stir well to coat the vegetables with the spices.
- Add turmeric powder, coriander powder, and salt. Mix thoroughly and cook for about 5 minutes, stirring occasionally.
- Add the chopped tomato and a splash of water (about 2 tablespoons). Cover the pan and cook for 10-12 minutes, until the vegetables are tender.
- Once the vegetables are cooked, sprinkle garam masala and mix well. Cook for an additional 2 minutes.
- Remove from heat, drizzle with lemon juice, and garnish with fresh cilantro before serving.
