Ingredients

  • Potatoes - 300 grams, diced
  • Cauliflower - 200 grams, florets
  • Onion - 1 medium, finely chopped
  • Tomato - 1 medium, chopped
  • Green chili - 1, slit (adjust to taste)
  • Ginger - 1 teaspoon, grated
  • Garlic - 2 cloves, minced
  • Turmeric powder - 1/2 teaspoon
  • Cumin seeds - 1/2 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Salt - to taste
  • Oil - 2 tablespoons
  • Fresh cilantro - for garnish
  • Lemon juice - 1 tablespoon

Steps

  1. Heat the oil in a large pan over medium heat. Add cumin seeds and let them sizzle for a few seconds.
  2. Add the chopped onions and sauté until they turn golden brown.
  3. Stir in the minced garlic, grated ginger, and slit green chili. Cook for another minute until fragrant.
  4. Add the diced potatoes and cauliflower florets to the pan. Stir well to coat the vegetables with the spices.
  5. Add turmeric powder, coriander powder, and salt. Mix thoroughly and cook for about 5 minutes, stirring occasionally.
  6. Add the chopped tomato and a splash of water (about 2 tablespoons). Cover the pan and cook for 10-12 minutes, until the vegetables are tender.
  7. Once the vegetables are cooked, sprinkle garam masala and mix well. Cook for an additional 2 minutes.
  8. Remove from heat, drizzle with lemon juice, and garnish with fresh cilantro before serving.
