- Potatoes - 200 grams, peeled and diced
- Carrots - 150 grams, peeled and sliced
- Onion - 1 medium, finely chopped
- Tomato - 1 medium, chopped
- Green chili - 1, slit
- Ginger - 1 teaspoon, grated
- Cumin seeds - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Coriander powder - 1 teaspoon
- Garam masala - 1/2 teaspoon
- Salt - to taste
- Oil - 1 tablespoon
- Fresh coriander leaves - for garnish
Steps
- Heat oil in a pan over medium heat and add cumin seeds. Let them splutter.
- Add finely chopped onions and sauté until they turn translucent.
- Stir in grated ginger and green chili, and cook for another minute.
- Add chopped tomatoes and cook until they soften.
- Sprinkle in turmeric powder, coriander powder, and salt. Mix well.
- Add diced potatoes and sliced carrots, stirring to coat them in the spices.
- Pour in 1/2 cup of water, cover the pan, and let it cook for about 15 minutes or until the vegetables are tender.
- Once cooked, sprinkle garam masala and mix well. Cook for another 2 minutes without the lid.
- Garnish with fresh coriander leaves before serving.
