Ingredients

  • Potatoes - 200 grams, peeled and diced
  • Carrots - 150 grams, peeled and sliced
  • Onion - 1 medium, finely chopped
  • Tomato - 1 medium, chopped
  • Green chili - 1, slit
  • Ginger - 1 teaspoon, grated
  • Cumin seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Salt - to taste
  • Oil - 1 tablespoon
  • Fresh coriander leaves - for garnish

Steps

  1. Heat oil in a pan over medium heat and add cumin seeds. Let them splutter.
  2. Add finely chopped onions and sauté until they turn translucent.
  3. Stir in grated ginger and green chili, and cook for another minute.
  4. Add chopped tomatoes and cook until they soften.
  5. Sprinkle in turmeric powder, coriander powder, and salt. Mix well.
  6. Add diced potatoes and sliced carrots, stirring to coat them in the spices.
  7. Pour in 1/2 cup of water, cover the pan, and let it cook for about 15 minutes or until the vegetables are tender.
  8. Once cooked, sprinkle garam masala and mix well. Cook for another 2 minutes without the lid.
  9. Garnish with fresh coriander leaves before serving.
