- Potatoes - 200 grams, peeled and diced
- Carrots - 150 grams, peeled and diced
- Fresh fenugreek leaves (methi) - 50 grams, chopped
- Onion - 1 medium, finely chopped
- Tomato - 1 medium, chopped
- Green chili - 1, slit (adjust to taste)
- Ginger - 1 teaspoon, grated
- Garlic - 2 cloves, minced
- Cumin seeds - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1/2 teaspoon (optional)
- Salt - to taste
- Oil - 2 tablespoons
- Water - 100 ml
Steps
- Heat oil in a pan over medium heat. Add cumin seeds and let them sizzle.
- Add the chopped onions and sauté until they turn translucent.
- Stir in the grated ginger, minced garlic, and slit green chili. Sauté for another minute until fragrant.
- Add the diced potatoes and carrots to the pan. Mix well and cook for 5-7 minutes, stirring occasionally.
- Sprinkle in turmeric powder, red chili powder (if using), and salt. Mix to coat the vegetables.
- Pour in the water, cover the pan, and let the vegetables cook for about 10 minutes or until tender.
- Once the potatoes and carrots are cooked, add the chopped tomatoes and fenugreek leaves. Stir well and cook for another 5 minutes until everything is well combined.
- Remove from heat and serve hot with roti or rice.
