Ingredients

  • Potatoes - 200 grams, peeled and diced
  • Carrots - 150 grams, peeled and diced
  • Fresh fenugreek leaves (methi) - 50 grams, chopped
  • Onion - 1 medium, finely chopped
  • Tomato - 1 medium, chopped
  • Green chili - 1, slit (adjust to taste)
  • Ginger - 1 teaspoon, grated
  • Garlic - 2 cloves, minced
  • Cumin seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1/2 teaspoon (optional)
  • Salt - to taste
  • Oil - 2 tablespoons
  • Water - 100 ml

Steps

  1. Heat oil in a pan over medium heat. Add cumin seeds and let them sizzle.
  2. Add the chopped onions and sauté until they turn translucent.
  3. Stir in the grated ginger, minced garlic, and slit green chili. Sauté for another minute until fragrant.
  4. Add the diced potatoes and carrots to the pan. Mix well and cook for 5-7 minutes, stirring occasionally.
  5. Sprinkle in turmeric powder, red chili powder (if using), and salt. Mix to coat the vegetables.
  6. Pour in the water, cover the pan, and let the vegetables cook for about 10 minutes or until tender.
  7. Once the potatoes and carrots are cooked, add the chopped tomatoes and fenugreek leaves. Stir well and cook for another 5 minutes until everything is well combined.
  8. Remove from heat and serve hot with roti or rice.
