Ingredients

  • Potatoes - 200 grams, peeled and diced
  • Carrots - 150 grams, peeled and sliced
  • Onion - 1 medium, finely chopped
  • Tomato - 1 medium, pureed
  • Ginger - 1 teaspoon, grated
  • Garlic - 1 teaspoon, minced
  • Green chili - 1, slit (optional)
  • Cumin seeds - 1/2 teaspoon
  • Turmeric powder - 1/4 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Salt - to taste
  • Oil - 2 tablespoons
  • Fresh coriander leaves - for garnish

Steps

  1. Heat oil in a pan over medium heat. Add cumin seeds and let them sizzle for a few seconds.
  2. Add chopped onions and sauté until they turn golden brown.
  3. Stir in the grated ginger, minced garlic, and slit green chili. Sauté for another minute.
  4. Add the pureed tomato and cook for 5-7 minutes until the oil separates from the mixture.
  5. Add turmeric powder, coriander powder, and salt. Mix well.
  6. Add diced potatoes and sliced carrots to the pan. Stir to coat the vegetables with the spice mixture.
  7. Pour in 1 cup of water, cover, and let it simmer for 15-20 minutes until the vegetables are tender.
  8. Once cooked, stir in garam masala and adjust salt if needed. Cook for another 2 minutes.
  9. Garnish with fresh coriander leaves before serving.
