- Tomato - 1 medium, pureed
- Ginger - 1 teaspoon, grated
- Garlic - 1 teaspoon, minced
- Green chili - 1, slit (optional)
- Cumin seeds - 1/2 teaspoon
- Turmeric powder - 1/4 teaspoon
- Coriander powder - 1 teaspoon
- Garam masala - 1/2 teaspoon
- Salt - to taste
- Oil - 2 tablespoons
- Fresh coriander leaves - for garnish
Steps
- Heat oil in a pan over medium heat. Add cumin seeds and let them sizzle for a few seconds.
- Add chopped onions and sauté until they turn golden brown.
- Stir in the grated ginger, minced garlic, and slit green chili. Sauté for another minute.
- Add the pureed tomato and cook for 5-7 minutes until the oil separates from the mixture.
- Add turmeric powder, coriander powder, and salt. Mix well.
- Add diced potatoes and sliced carrots to the pan. Stir to coat the vegetables with the spice mixture.
- Pour in 1 cup of water, cover, and let it simmer for 15-20 minutes until the vegetables are tender.
- Once cooked, stir in garam masala and adjust salt if needed. Cook for another 2 minutes.
- Garnish with fresh coriander leaves before serving.
