Ingredients

  • Potatoes - 200 grams (peeled and diced)
  • Carrots - 200 grams (peeled and diced)
  • Onion - 1 medium (finely chopped)
  • Tomato - 1 medium (chopped)
  • Green chili - 1 (slit lengthwise)
  • Ginger - 1 teaspoon (grated)
  • Cumin seeds - 1/2 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Salt - to taste
  • Oil - 2 tablespoons
  • Fresh coriander leaves - for garnish

Steps

  1. Heat oil in a pan over medium heat and add cumin seeds. Allow them to splutter.
  2. Add the finely chopped onion and sauté until it turns translucent.
  3. Stir in the grated ginger and slit green chili, cooking for another minute.
  4. Add the chopped tomato and cook until it becomes soft and mushy.
  5. Mix in the turmeric powder, coriander powder, and salt, stirring well.
  6. Add the diced potatoes and carrots, mixing them with the spices.
  7. Pour in 1 cup of water, cover the pan, and let it simmer for about 15 minutes or until the vegetables are tender.
  8. Once cooked, sprinkle garam masala and stir gently.
  9. Garnish with fresh coriander leaves and serve hot.
