- Green chili - 1 (slit lengthwise)
- Ginger - 1 teaspoon (grated)
- Cumin seeds - 1/2 teaspoon
- Turmeric powder - 1/2 teaspoon
- Coriander powder - 1 teaspoon
- Garam masala - 1/2 teaspoon
- Salt - to taste
- Oil - 2 tablespoons
- Fresh coriander leaves - for garnish
Steps
- Heat oil in a pan over medium heat and add cumin seeds. Allow them to splutter.
- Add the finely chopped onion and sauté until it turns translucent.
- Stir in the grated ginger and slit green chili, cooking for another minute.
- Add the chopped tomato and cook until it becomes soft and mushy.
- Mix in the turmeric powder, coriander powder, and salt, stirring well.
- Add the diced potatoes and carrots, mixing them with the spices.
- Pour in 1 cup of water, cover the pan, and let it simmer for about 15 minutes or until the vegetables are tender.
- Once cooked, sprinkle garam masala and stir gently.
- Garnish with fresh coriander leaves and serve hot.
