Ingredients

  • Potatoes - 300 grams
  • Green peas - 50 grams
  • Onion - 1 medium, finely chopped
  • Ginger - 1 teaspoon, grated
  • Green chili - 1, finely chopped
  • Coriander powder - 1 teaspoon
  • Cumin powder - 1/2 teaspoon
  • Turmeric powder - 1/4 teaspoon
  • Garam masala - 1/2 teaspoon
  • Salt - to taste
  • Fresh coriander leaves - 2 tablespoons, chopped
  • Chickpea flour (besan) - 100 grams
  • Rice flour - 2 tablespoons
  • Water - as needed
  • Oil - for deep frying

Steps

  1. Boil the potatoes in a pot until soft, then peel and mash them in a bowl.
  2. In a separate pan, heat a teaspoon of oil, add the chopped onions, and sauté until golden.
  3. Add ginger, green chili, and green peas to the pan, cooking for another 2-3 minutes.
  4. Stir in coriander powder, cumin powder, turmeric powder, garam masala, and salt, mixing well, then remove from heat.
  5. Combine the sautéed mixture with the mashed potatoes and mix in chopped coriander leaves. Allow to cool slightly.
  6. Shape the potato mixture into small balls or patties.
  7. In a bowl, mix chickpea flour, rice flour, and salt. Gradually add water to form a smooth batter that coats the back of a spoon.
  8. Heat oil in a deep frying pan over medium heat.
  9. Dip each potato ball into the batter, allowing excess to drip off, then carefully place in the hot oil.
  10. Fry the bonda in batches until golden brown, about 4-5 minutes, turning occasionally for even cooking.
  11. Remove with a slotted spoon and drain on paper towels before serving.
