- Potato - 200 grams, diced
- Okra (Bhindi) - 200 grams, trimmed and cut into 1-inch pieces
- Onion - 1 medium, thinly sliced
- Tomato - 1 medium, chopped
- Ginger - 1 teaspoon, grated
- Garlic - 1 teaspoon, minced
- Turmeric powder - 1/2 teaspoon
- Coriander powder - 1 teaspoon
- Cumin seeds - 1/2 teaspoon
- Red chili powder - 1/2 teaspoon (adjust to taste)
- Garam masala - 1/2 teaspoon
- Salt - to taste
- Cooking oil - 2 tablespoons
- Fresh cilantro - for garnish
Steps
- Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
- Add sliced onions and sauté until they become translucent.
- Stir in the grated ginger and minced garlic, cooking for an additional minute until fragrant.
- Add the diced potatoes and sauté for 5 minutes, stirring occasionally.
- Add the chopped tomatoes, turmeric powder, coriander powder, red chili powder, and salt. Mix well and cook for another 5 minutes until the tomatoes soften.
- Now add the okra pieces and gently mix everything together. Cover the pan and let it cook for about 10 minutes, stirring occasionally to prevent sticking.
- Once the okra and potatoes are cooked through, sprinkle garam masala over the top and mix gently.
- Remove from heat, garnish with fresh cilantro, and serve hot.
