Ingredients

  • Potato - 200 grams, diced
  • Okra (Bhindi) - 200 grams, trimmed and cut into 1-inch pieces
  • Onion - 1 medium, thinly sliced
  • Tomato - 1 medium, chopped
  • Ginger - 1 teaspoon, grated
  • Garlic - 1 teaspoon, minced
  • Turmeric powder - 1/2 teaspoon
  • Coriander powder - 1 teaspoon
  • Cumin seeds - 1/2 teaspoon
  • Red chili powder - 1/2 teaspoon (adjust to taste)
  • Garam masala - 1/2 teaspoon
  • Salt - to taste
  • Cooking oil - 2 tablespoons
  • Fresh cilantro - for garnish

Steps

  1. Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
  2. Add sliced onions and sauté until they become translucent.
  3. Stir in the grated ginger and minced garlic, cooking for an additional minute until fragrant.
  4. Add the diced potatoes and sauté for 5 minutes, stirring occasionally.
  5. Add the chopped tomatoes, turmeric powder, coriander powder, red chili powder, and salt. Mix well and cook for another 5 minutes until the tomatoes soften.
  6. Now add the okra pieces and gently mix everything together. Cover the pan and let it cook for about 10 minutes, stirring occasionally to prevent sticking.
  7. Once the okra and potatoes are cooked through, sprinkle garam masala over the top and mix gently.
  8. Remove from heat, garnish with fresh cilantro, and serve hot.
