- Whole wheat flour - 1 cup
- Boiled potatoes - 2 medium (about 300g)
- Onion - 1 small, finely chopped
- Green chili - 1, finely chopped
- Coriander leaves - 2 tablespoons, chopped
- Cumin seeds - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1/2 teaspoon
- Salt - to taste
- Oil - 2 tablespoons (for cooking)
- Water - as needed
Steps
- In a mixing bowl, combine whole wheat flour and a pinch of salt. Gradually add water and knead to form a soft dough. Cover with a damp cloth and let it rest for 15 minutes.
- In another bowl, mash the boiled potatoes until smooth. Add chopped onion, green chili, coriander leaves, cumin seeds, turmeric powder, red chili powder, and salt. Mix well to combine all ingredients.
- Divide the dough into 4 equal portions and roll each portion into a small ball. Roll out one ball into a small circle using a rolling pin.
- Place 2 tablespoons of the potato filling in the center of the rolled dough. Bring the edges of the dough together to seal the filling inside and gently flatten it.
- Roll out the stuffed dough ball carefully into a larger circle, about 6-7 inches in diameter, ensuring the filling does not spill out.
- Heat a skillet or tawa over medium heat. Place the rolled-out roti on the hot skillet and cook for about 1-2 minutes until small bubbles form.
- Flip the roti and brush a little oil on the cooked side. Cook for another 1-2 minutes, pressing gently with a spatula until golden brown spots appear.
- Repeat the process with the remaining dough and filling. Serve hot with vegan yogurt or chutney.
