Ingredients

  • Whole wheat flour - 1 cup
  • Boiled potatoes - 2 medium (about 300g)
  • Onion - 1 small, finely chopped
  • Green chili - 1, finely chopped
  • Coriander leaves - 2 tablespoons, chopped
  • Cumin seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1/2 teaspoon
  • Salt - to taste
  • Oil - 2 tablespoons (for cooking)
  • Water - as needed

Steps

  1. In a mixing bowl, combine whole wheat flour and a pinch of salt. Gradually add water and knead to form a soft dough. Cover with a damp cloth and let it rest for 15 minutes.
  2. In another bowl, mash the boiled potatoes until smooth. Add chopped onion, green chili, coriander leaves, cumin seeds, turmeric powder, red chili powder, and salt. Mix well to combine all ingredients.
  3. Divide the dough into 4 equal portions and roll each portion into a small ball. Roll out one ball into a small circle using a rolling pin.
  4. Place 2 tablespoons of the potato filling in the center of the rolled dough. Bring the edges of the dough together to seal the filling inside and gently flatten it.
  5. Roll out the stuffed dough ball carefully into a larger circle, about 6-7 inches in diameter, ensuring the filling does not spill out.
  6. Heat a skillet or tawa over medium heat. Place the rolled-out roti on the hot skillet and cook for about 1-2 minutes until small bubbles form.
  7. Flip the roti and brush a little oil on the cooked side. Cook for another 1-2 minutes, pressing gently with a spatula until golden brown spots appear.
  8. Repeat the process with the remaining dough and filling. Serve hot with vegan yogurt or chutney.
