- Potatoes - 300 grams
- Chickpea flour (besan) - 100 grams
- Water - 150 ml
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1 teaspoon
- Cumin powder - 1 teaspoon
- Salt - 1 teaspoon
- Fresh coriander leaves - 2 tablespoons, chopped
- Green chili - 1, finely chopped
- Oil - for frying
Steps
- Boil the potatoes in salted water until tender, about 15-20 minutes. Drain and let cool slightly.
- Peel the boiled potatoes and mash them in a bowl. Add turmeric, red chili powder, cumin powder, salt, chopped coriander, and green chili. Mix well until combined.
- In a separate bowl, combine chickpea flour, water, and a pinch of salt to form a smooth batter.
- Heat oil in a frying pan over medium heat. Take a portion of the potato mixture, shape it into a patty, and dip it in the chickpea batter to coat.
- Carefully place the coated patty in the hot oil and fry until golden brown on both sides, about 3-4 minutes per side. Repeat with the remaining mixture.
- Remove the fried Aloo Baida from the pan and drain on paper towels. Serve hot with chutney or sauce of your choice.
