- Almond flour - 100 grams
- Erythritol - 50 grams
- Unsweetened almond milk - 100 ml
- Cardamom powder - 1/2 teaspoon
- Ghee - 2 tablespoons
- Chopped pistachios - 10 grams (for garnish)
Steps
- In a non-stick pan, heat ghee over low heat.
- Add almond flour and sauté for 2-3 minutes until lightly golden, stirring continuously to prevent burning.
- Stir in erythritol and mix well for another minute.
- Pour in almond milk and add cardamom powder, stirring continuously until the mixture thickens and starts to leave the sides of the pan (about 10-15 minutes).
- Once thickened, transfer the mixture to a greased plate or tray and flatten it evenly with a spatula.
- Let it cool for about 10 minutes. Once slightly set, cut into desired shapes (squares or diamonds).
- Garnish with chopped pistachios and allow to cool completely before serving.
