Ingredients

  • Almond flour - 100 grams
  • Erythritol - 50 grams
  • Unsweetened almond milk - 100 ml
  • Cardamom powder - 1/2 teaspoon
  • Ghee - 2 tablespoons
  • Chopped pistachios - 10 grams (for garnish)

Steps

  1. In a non-stick pan, heat ghee over low heat.
  2. Add almond flour and sauté for 2-3 minutes until lightly golden, stirring continuously to prevent burning.
  3. Stir in erythritol and mix well for another minute.
  4. Pour in almond milk and add cardamom powder, stirring continuously until the mixture thickens and starts to leave the sides of the pan (about 10-15 minutes).
  5. Once thickened, transfer the mixture to a greased plate or tray and flatten it evenly with a spatula.
  6. Let it cool for about 10 minutes. Once slightly set, cut into desired shapes (squares or diamonds).
  7. Garnish with chopped pistachios and allow to cool completely before serving.
