Ingredients

  • Acorn squash - 1 medium (about 600g)
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Garlic powder - 1/2 teaspoon
  • Dried oregano - 1 teaspoon
  • Tomato sauce - 1/2 cup
  • Fresh spinach - 1 cup, chopped
  • Red onion - 1/2 medium, thinly sliced
  • Bell pepper - 1/2 medium, diced
  • Mushrooms - 100g, sliced
  • Nutritional yeast - 2 tablespoons (optional, for a cheesy flavor)
  • Fresh basil - a handful, for garnish

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Cut the acorn squash in half lengthwise and scoop out the seeds.
  3. Brush the inside of each half with 1 tablespoon of olive oil and season with salt, black pepper, garlic powder, and dried oregano.
  4. Place the squash halves cut-side down on a baking sheet and roast in the preheated oven for 25-30 minutes, or until tender.
  5. While the squash is roasting, prepare the toppings: In a skillet, heat the remaining tablespoon of olive oil over medium heat.
  6. Add the sliced red onion and bell pepper to the skillet and sauté for about 3-4 minutes until softened.
  7. Add the sliced mushrooms and chopped spinach to the skillet and cook for an additional 3-4 minutes until the mushrooms are tender and spinach is wilted.
  8. Once the acorn squash is done roasting, remove it from the oven and carefully flip the halves over.
  9. Spread 1/4 cup of tomato sauce on each half of the squash, then top with the sautéed vegetable mixture.
  10. Sprinkle nutritional yeast on top if using, and return to the oven for another 5-7 minutes.
  11. Remove from the oven, garnish with fresh basil, and allow to cool slightly before serving.
