- Acorn squash - 1 medium (about 600g)
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Garlic powder - 1/2 teaspoon
- Dried oregano - 1 teaspoon
- Tomato sauce - 1/2 cup
- Fresh spinach - 1 cup, chopped
- Red onion - 1/2 medium, thinly sliced
- Bell pepper - 1/2 medium, diced
- Mushrooms - 100g, sliced
- Nutritional yeast - 2 tablespoons (optional, for a cheesy flavor)
- Fresh basil - a handful, for garnish
Steps
- Preheat the oven to 200°C (400°F).
- Cut the acorn squash in half lengthwise and scoop out the seeds.
- Brush the inside of each half with 1 tablespoon of olive oil and season with salt, black pepper, garlic powder, and dried oregano.
- Place the squash halves cut-side down on a baking sheet and roast in the preheated oven for 25-30 minutes, or until tender.
- While the squash is roasting, prepare the toppings: In a skillet, heat the remaining tablespoon of olive oil over medium heat.
- Add the sliced red onion and bell pepper to the skillet and sauté for about 3-4 minutes until softened.
- Add the sliced mushrooms and chopped spinach to the skillet and cook for an additional 3-4 minutes until the mushrooms are tender and spinach is wilted.
- Once the acorn squash is done roasting, remove it from the oven and carefully flip the halves over.
- Spread 1/4 cup of tomato sauce on each half of the squash, then top with the sautéed vegetable mixture.
- Sprinkle nutritional yeast on top if using, and return to the oven for another 5-7 minutes.
- Remove from the oven, garnish with fresh basil, and allow to cool slightly before serving.
