Ingredients

  • Wild rice - 100 grams
  • Water - 500 ml
  • Maple syrup - 2 tablespoons
  • Olive oil - 1 tablespoon
  • Yellow onion - 1 small, diced
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Garlic - 1 clove, minced
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh thyme - 1 teaspoon, chopped
  • Chopped pecans - 30 grams

Steps

  1. Rinse the wild rice under cold water until the water runs clear.
  2. In a medium pot, combine the wild rice and water, and bring to a boil. Reduce the heat to low, cover, and simmer for 30-35 minutes or until the rice is tender and most of the water is absorbed.
  3. While the rice is cooking, heat the olive oil in a skillet over medium heat. Add the diced onion, carrot, and celery, and sauté for about 5-7 minutes until the vegetables are softened.
  4. Add the minced garlic, salt, black pepper, and chopped thyme to the skillet, and cook for another 2 minutes until fragrant.
  5. Once the wild rice is cooked, fluff it with a fork and stir in the sautéed vegetables and maple syrup. Mix well to combine.
  6. Serve the Abenaki Maple Rice warm, garnished with chopped pecans on top.
